Coffee Cake


  • FOR THE CAKE:
  • 1-½ stick Butter, Softened
  • 2 cups Sugar
  • 3 cups Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-¼ cup Whole Milk
  • 3 whole Egg Whites, Beaten Until Stiff

  • FOR THE TOPPING:
  • 1-½ stick Butter, Softened
  • ¾ cups Flour
  • 1-½ cup Brown Sugar
  • 2 Tablespoons Cinnamon
  • 1-½ cup Pecans, Chopped ( I did not use pecans...but I am sure it is still delectable WITH them!)

  • Directions:
Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Beat egg whites and set aside.
Cream butter and sugar. Add flour mixture and milk alternately until combined. Don’t overbeat. Fold in beaten egg whites with a rubber spatula. Spread in a well-greased 9 x 13 (or LARGER!) baking pan. A cake pan with higher sides would be best.
In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.
Bake for 40 to 45 minutes, or until no longer jiggly. Serve warm—delicious!

Fruity Oatmeal

I LOVE my oatmeal for breakfast and I am always looking for more and different ways to prepare it! You can be so creative with oatmeal, and personally, it is the ONLY food that will hold me until lunch. Since I have it every morning I need to make sure I do not get tired of it....here is one of my oatmeal recipes!

I love fruit in my oatmeal, here I chopped up an apple and a pear together....I used 1/2 the mixture, and the other 1/2 I will use tomorrow morning!


Ingredients:
1/2 cup oatmeal
1 cup water
1/2 apple
1/2 pear
1/2 cup mixed berries (black berries, raspberries, and blueberries)
1 Tablespoon Splenda- if you need some more sweetness
1/2 teaspoon cinnamon




Prepare oatmeal as directed
chop the apple and pear
Place all on top of your oatmeal!!!
